What makes it “activated”?
The buckwheat groats are immersed in purified water until the seed begins to sprout, then carefully dehydrated at low temperature until light and crunchy (~9–10% lighter). This process helps reduce the naturally-occurring compounds that may make seeds harder to digest, while bringing out a fresher, sweeter flavour.
